For years I have been known for my healthy snacks and tasty treats, it has almost become a trademark in all the teaching that I have done. My flapjack is a particular favourite!

I have been experimenting with getting the right balance of fruit, rolled oats and seeds and nuts to give an easy to eat and delicious snack and now I can share my ‘secret’ recipe, the origins of which were in my family 50 years ago.

Herbal Tea

When making it as a cold drink, use 2 bags, not 1, add ice and lemon and you have a tasty drink as an alternative to water whilst you are studying.

Jane's Famous Flapjack

  1. Warm 250g butter and 4 tablespoons golden syrup in a pan until melted.

  2. Add the flour, 100g, rolled oats 400g, 100g sugar, dried fruit like cranberries or apricots, ‘crisped rice’ about 200g (the cereal).

  3. Put into greased baking tray and cook at 180’C for 15 minutes maximum.

  4. When finished, cut into small rectangles. One tray will make about 24 flapjacks.

  5. Enjoy!
